They absorb shock and also prevent you from scratching the crap out of the pedal's paint when installing the switch.
That said, I also prefer the look of the metal washers and use the switches which come with those when possible. Sadly those switches are not always available

I didn't know they absorbed shock. I thought they just prevented the finish from being scratched. That makes more sense. Still ugly though.
