Can't answer the cold brew question, as I've never done it but I do have a Chemex and just recently started using it. You really need a gooseneck kettle (like in that photo) to do it right, and I finally got one. Usually did French press before but I like the Chemex - comes out really nice when you start getting better at it.

so... my goto I need to buy coffee coffee and don't care is Medaglia D'oro and NORMALLY the grind is a corse espresso grind... which you can put in most things even a french press... so because tired and achy and mad at the world... you know.. being awake and wanting coffee... I do my normal amount in a french press like I have done for years... well turns out they either changed their grind or there did a batch with a actual correct espresso grind... which clogged the press and made it exploded all over me and I had to dump it in a pan and pour it through a chemex.. fuckthismorning
that said.. looks like using my stovetop espresso maker with this can will be better than normal

Not sure it's the best but what I do is take 1c coarsely ground coffee and put it in 4c water. Let sit over night (12hrs give or take). Strain the coffee out through a filter. Add 4c water more.
I need the "I saw a video of this blind Vietnamese busker once so I just scalloped my frets with a drill and an old Dremel bit on the dining room table in my underwear" of coffee.

Although I am thinking about picking up a cheap grinder to grind my own beans.
They have this coffee at sort of a modern/hipsterfied Vietnamese restaurant here that's insane... it's chicory coffee (Cafe Du Monde, I think, which is nothing fancy but still tasty and quite gnarly) done in a cool little pour over type thing (think less V60/Chemex, more some weird Moka type hybrid) into sweetened condensed milk. It's like rocket fuel. So maybe that dremels your frets?
