Yo dudes!
UglyNora helped me out with some general questions about the Infinity Looper, but I have one more:
For the Out 1 and Out 2, are those specifically for Loop 1 and Loop 2? For instance, does:
Loop 1 = Out 1
Loop 2 = Out 2
?
I'm trying to figure it out on the Pigtronix website.

Hmmmm... well, maybe both outs are just "mono" versions of both loops together or something? But then you can put them into some kind of stereo thing (like the Strymon Deco for instance) and make it stereo? I'd only be using one mono input from guitar.

I've never used the stereo portion, but this info may be helpful if you haven't read it already:
Input Split
When Input Split is off, both loops record stereo audio coming from Inputs 1 and 2.
When Input Split in on, Loop 1 gets audio from Input 1 only and Loop 2 gets audio from Input 2 only.
In 1
Looper input 1. This is normally the input to use, unless you are using both inputs for stereo or two instruments.
In 2
Looper input 2. Use this input for the second input of a stereo signal, or a second instrument using Input Split
**When nothing is connected to Input 2, the signal from Input 1 is automatically passed to Input 2.
Out 1
Main pass-through/loop output, uses a standard (TS) 1/4” instrument cable. Amp, mixer, or DI goes here.
Out2
Second pass-through/loop output, for use when you're using stereo inputs, or two instruments, or want to split your output signal (one to an amp, one to a recording unit, for example).

Cool. I read that on the Pig site too. I think what it's saying is that outputs 1 and 2 will output the same signal unless you're using stereo inputs, which I won't be. Doesn't look like you can have Loop 1 coming out of output 1 only and Loop 2 coming out of output 2 only. Unless I'm wrong of course. Thanks!

This all sounds like a super complicated setup but it's really easy just you need two pieces of gear. A looper with midi, and an sp-303/sp404. I have both a 303 and a 404 although I'm only using the 404 but with a looper with a midi out and making it the master clock, you can get patterns on the sampler to always be in sync with your loops.
There is a lot of ways you can skin this but the best and most intuitive is going to need at least two pieces of gear.

That's how I read it too. You can always call them and ask, or send an email although they ignored my last 10 emails asking for firmware upgrade tech support.

could u plug in a dummy cable into the 2nd input that isn't connected to anything, that way the INFINITY will think that you are using a stereo signal and route input 1 to output 1, and input 2 to output 2…?

THAT is a great idea! I do that with my keyboard all the time so kill the speakers... just a 1/4" in the headphone slot.
