The only downside to the iPad is that you could be limited after a few years and need a new one.

Case in point -- I have an iPad first generation. I can't get most of these apps in their current iteration.

I should update but I let the wife do that.

Well, my take on that is that I will have a pretty badass VST Synth, Sampler, Quick and Dirty recording unit, etc.

No more updates, oh well. I mean, I am pretty happy with the development of the apps in mine, as is. My iPad has a few years left before it is obsolete and I will just keep filling it with stuff that seems handy.

Al.so, if you have an iPad, Samplr (no "e" in there) is a great app with a well-thought interface and lots of interesting features.

For iPhone/iPad, ThumbJam is highly recommended too.
Basically a very expressive instrument using real instrument samples (very high quality stuff) with an integrated looper, lots of scales options, etc.
It's developed by the guy who made the awesome Sooperlooper, very good stuff.

Do you have animoog? If you do I may need to commandeer that from you for a bit ;)

I think if the interface was just on a screen on a keyboard that Moog sold, it would be far and away their most lusted after model. Does shit you can't do with all of Moog's other synths combined.
Indeed. I can't just play it on the iphone, for my experience, I don't like to mess with an usb port, midi or an iphone charger when I'm making music. But a hardware version of the animoog, and/or that moog filter app they also have, would be amazing.
That was my initial reaction too. I've had an iPad (pretty much solely for music) for a bit more than a year now and it was an amazing purchase. Many apps are awesome and cheap. Animoog deserves the credit. It's probably my favorite iPad synth and I have a Little Phatty and Microkorg to play with... Samplr has been mentioned and for a good reason, the workflow is very specific to the iPad. Arturia's iSEM and iMini are just as good as their computer counterparts. Audulus is an amazing modular environment you can use to create the craziest drones. Drums wise, I'm very impressed with iMPC and iMPC pro to the point that they've actually replaced my DAW's sampler... And I have a massive drum samples collection. It's just so easy and straightforward to mess with it.

Be sure to also check out Korg iMS20, Touch OSC (turns your touch screen into a custom midi controller), Tachyon, SquareSynth. Sylo Synth... Some people like Waldorf's Nave, I don't.

The USB port is not really a problem though. The battery is enough to keep your playing for the entire afternoon if not the entire day and using the output jack with an appropriate cable, which lends some decent results, leaves the lightning port open for a charger. With Yosemite and iOS 8, it's now possible to share midi via Bluetooth. Another cable you won't have to worry about.
Good deals: OsbornKT, Phantasmagorovich, UglyCasanova, DarkAxel, Skip, D.o.S, ColdBrightSunlight, Eivind August, Goroth

Hmmm, I kinda shied away from anything touchpad or smartphoneish, but will have to look into this. Thanks!

This has taken a nice twist.
Samplr doesn't fill the synth void, but Jesus god is it cool.

I wasn't near an instrument when I downloaded it, so I recorded a bit of humming.
Chopped it up to individual notes, changed the octave, added a filter, and it didn't sound like humming anymore.
And then I played myself. Magic.

Such an intuitive way to manipulate samples.

Oh yeah I know, I just meant the apps themselves. Not all the weird noise-synth apps have any midi interactivity but most of the major apps do.
