I've seen the guy's handiwork. It's very clean and professional. Doesn't look like a rats nest/diy nightmare with shit all crammed/crooked and stuff. The pedals he made were quality. If you've seen the quality of his work (and you're happy with it), you're best qualified to make a judgement of its worth.
There're lots of well qualified builders who aren't making money hand over fist from it. Lots of competition.

Just imagine the work is of similar quality to the two companies I mentioned in the OP (Ramble FX/Fulltone), and base an estimate from there on the specs I provided? Is it like taboo around here to do so?

No, it's just not super productive. $150-200 is what most builders would charge you for something like this, but not all of them -- some will charge significantly more, some significantly less. The scope is so broad that the actual fiscal amount isn't really the important reason to go with a builder.
As far as "what's the most you would pay for X," I don't know. For me, probably like $100, because I don't want one.

Right. For me part of it is getting the fuzz I want in the enclosure I want, with the graphic I want.
