how do builders like dr scientist get those soft switches in their pedals? where can you buy that and how come more people don't do it? are there wiring diagrams anywhere...?

That's one way of doing it. You can also incorporate a flip flop circuit and a non latching relay for soft touch true bypass switching, but the parts count is higher than using a microcontroller. I found this article rather informative. http://www.geofex.com/Article_Folders/bosstech.pdf

Or you could use a 4069 instead of a micro controller
