If you're using leaded solder, between 600 and 650 should be good. If you're using lead free, maybe 650-700. If you're using cheap lead free solder, you might consider just stabbing yourself in the eye with the iron to save some time. Occasionally, on larger things (like Neutrik jacks, grounding to pots, etc), you may just wanna turn it up a bit. Trial and error, etc. Larger tips help keep you from having to crank it up, but it's hard to change tips when the iron is hot.
I almost always solder at 350C, which is about 660F. That's with lead free solder (The kind with some nickel and other things added to make it not suck).

Basically any electronics solder wire you're going to buy is rosin core, so everything still applies.
