There are other folks much better versed in this subject than me, but Charlie Patton and Robert Johnson immediately come to my mind when it comes to old blues.
If you're looking for old music recorded recently (I know, not what you're specifically asking, but...), Cordelia's Dad does old appalachian folk (or as they call it f**k) music - Comet and Spine are the two most "old-timey" of their albums.
Also, there's always the Smithsonian / Folkways collections of old recorded folk / blues / field music.
Recommendations for old recorded music. Think 1920's, etc.

I'm more like a mids-ist than a bassist.

Bix Beiderbecke immediately springs to mind for that 20s jazz sound.
My ex g/f is more up on this kind of thing than I am, I'll ask her for some ideas.

Mississippi John Hurt - The Complete 1928 OKEH Recordings
Country blues/folk at it's finest.
Probably his best known song.

Elizabeth Cotten's great. Cheack out freight train, unbelievable playing.
Son House will haunt your dreams.
I've got a great double album of all prewar gospel tunes. It's called American Primitive, Volumes 1 & 2. I'm pretty sure it's on amazon, definitely a worthwhile purchase.
Blind Lemon Jefferson and Blind Willie McTell are both great. The latter plays a mean 12 string

Lemon Jefferson has always had my favourite name of any of the old bluesers. And i love willie McTell. he's outrageous. i had a big willie McTell collection. i don't remember where that got to.
i'll get on it.
I've got a fuzzbox and i'm not afraid to use it
