When I want to record a quick little demo, I use guitar->VJr->isobox -> SM58 knock off -> Yamaha mixer -> Delta 66 interface -> Audition. I use a parametric EQ to make the guitar sound more natural through the isobox, and I aux in a bit of reverb, since the isobox is ridiculously dead.
Otherwise... I've got a ton of stuff in my little home studio.

I use all that regularly, and I have more gear in the other room that I haven't used yet-- that's just what I have at arm's reach. I just remodeled my studio, and put up $7k worth of acoustic panels.
