Ok, so I am going to build either a Shin Ei or a FuzzRite fuzz. For the FuzzRite, I would go with the kit from Mammoth Electronics, as I have heard good things about this company, but if I would go with the Shin Ei, where should I order from? I don't want to etch my own board yet, I'd prefer to do a kit since its my first build

Ok, but I have read on some sites that say that this specific company's model will do about half the volume, and some say it boosts your signal, and some say it stays the same.
Just guessing that its probably not dependant on the pcb. Its probably just tweaked resistor values for the modded one. Find a schematic for the one you want or find any info on the mod to make it louder. EDIT
I didn't have an volume problems with it. Thing gets louds as fuck and there wasn't a volume drop. The only snag I hit was that some of the trannies they sent weren't on their spec sheet, so it took me a little bit to figure out what leg went where.

I looked into the GGG pcb and it does have a clean boost on the output that uses another 2n3904. also if you remove the mid scoop completely, you should have plenty of volume without using the clean boost on the out. removing the mid scoop gives it a totally different sound so you might just want to get the GGG and build with the 3 transistors using the documentation on their site for the volume boost version.
