So, how hard is tagboard anyway?
I've been wanting to really get into DIY, and it looks rad. Plus, it makes more sense to me for some reason.

I never use tagboard myself but it's a good place to start. Tagboard projects are usually the simplest sort of fuzzes/boosts. With vero say, there's a lot more that can go wrong and it's harder to see the mistakes compared to tagboard.

It's not hard at all, actually. Much easier than a PCB, at least in my opinion. The main issue with them is making sure they are secured and not floating around in the enclosure.
