I'm going to go out on a limb and say that pre-Thai food was earnest idiocy, and if nothing else it's validation for builders that they can, in fact, peddle bullshit in their marketing and people will swallow it.

Last time I was in London I had Lebanese food for the first time and my goodness...

I've started making my own chili paste in a mortar. Food processors are digital, and manual mashing is better. Maybe you can't, but I can taste it. I did go to culinary school though.

(Really though, I make my own chili paste for my thai dishes and it's a game changer)
