Made food for work summer party thing.
Chili with a 70/30 mix of beef/pork that I ground myself from organic meat. Lotsa good spices and beans.
Did some vegan chili too with puy lentils which turned out great.
Currently cooking rice for 20 people and trying to get to work on time. I will fail. But you know. Work party>actual work.

Currently braising a pork neck I'll be using for chili tomorrow. Made a rub of paprika, garlic powder, chili powder, cinnamon, black pepper, cayenne and salt. Seared it and added water for the fond, which I put garlic and garlic scapes, parsley, habaneros and lemon drop peppers and celeriac stalks all from my mother's garden to, as well as red onion and bay leaves. Tomorrow I'll add cumin and hopefully fresh cilantro, with the other stuff like tomato, peppers, beans, bacon etc. Hope I can find some cheap steak to toss in as well. Gonna be so good, can't wait.

I have a head of broccoli I'm going to fry with some ginger, garlic, onions, chilis, kimchi paste, and some leftover rice. It's a little meal I like to call, Dinner.

You really don't need much! I ended up chopping up some anchovies and throwing them in there too.
What are you going to do with that pot, remove the meat and strain out the broth and then add the broth to the meat with the peppers, beans and tomatoes and whatnot?

Gotta get that umami!
I'll take out the meat, cool it then pull it. Reduce the broth then pour it over in something smaller cause I need the cast iron pot, gonna remove the various stalks and leafs, but keep in the onion, garlic and chilis cause I like my shit rustic.
Starting with the empty pot, I'll lightly caramelize some onion, then add bacon and peppers till the stuff is fried through, I like that grilled pepper taste. Then I'll put in tomato paste, which is also gonna need a little low-heat frying to remove the acidity. In with the meat, broth, tinned tomatoes, and the remaining spices. Gonna let that simmer for a an hour or two, in with the green beans, simmer another hour till it's almost time to eat, then the kidney/black/white beans go in. Gonna eat it with rice, creme fraiche, cheddar and chopped red onion with parsley.
Ideally I'd also pour in a dark beer or a couple shots of whiskey, but since I'm on the wagon I won't. Could go for some unfiltered apple juice though. Also gonna add garlic at various stages like the frying and a couple of hours in. I use a lot of garlic.

That sounds like an ideal braise. I like to use beer or whiskey with the broth too sometimes but I bet you won't miss it, that's gonna have Maxxx Flavor I'm sure!
