Feel like I'm at a bit of a loss in terms of stereo verbs. I should probably just get a cheap RV5, but wanted people's thoughts.
I've tried and had a Hall of Fame, had a few RV5's, had the Space.
I guess I want something kinda tweaky, but not nearly as vast or large as the Space. Sounds like I just should get a Hall of Fame again and screw with Toneprints...

Re: Stereo Verbs
For stereo verbs, I tend to like using 2 mono verbs. Or a delay in one side and verb on the other.
As far as true stereo... The strymon verbs are a little easier to tweak without going super in depth, but they default to a brighter tone than you may be after. That new Empress verb is supposed to be killer. The one I dream of is that recovery fx endless summer deluxe, but that is line level

Flipped my HOF, but not because I didn't like it a lot, just because I wanted quick cash to pay off an Eclipse. Kept the MS-100BT even though I mostly liked the HOF better for what it did, just because the Zoom has a few more tricks handy. I really like the handful of reverbs the iStomp has, and it also has versatility that makes it a keeper. The Digi is versatile for all the algorithms but doesn't feel tweaky because it's just four knobs.
None of these are gonna gush character like the RM-1N. Some will be down on some of them accordingly. They work well for over-stacking delay, reverb, modulation, and dirt, though. The iStomp Lexicon Hall algo has a bit of a vibe while being pretty stackable, though.
