and removing the foot switch and putting on a knob.
Difficult? Recommends?

I'm working on rehousing a wah at the moment as opposed to a knob. It's not too difficult, but I'd suggest getting a parametric equalizer or one of these
http://www.jimdunlop.com/index.php?page=products/pip&id=374&pmh=products/p_and_e_detail instead.
...unless you're planning on using the wah enclosure for something else (bit-crusher, delay, feedbackloop, etc) and still want the fun of playing around with a wah.

I need the project. I'm so bored. Plus, Wahs, need to be small and my footrocker sucks.

I can't think of any reason why you shouldn't be able to replace the pot or the switch. Just make sure you get a pot of the same value/resistance. As to the switch, just make sure you get a switch that'll do what you're looking to do

The switch is actually rusty, so it'd be nice to change.
The pot I wanna replace because grease or something got into it, and it is REALLY fucked up. Doesn't scroll. It clicks.

It clicks? I'd replace it. Try here
http://www.pedalpartsplus.com/mm5/merchant.mvc?Screen=CTGY&Store_Code=PPP&Category_Code=POT first. If they don't have what you're looking for, you might want to check mouser or allied electronics.
They have switches too so just look around and you could probably find a replacement switch. If you're trying to do something with the switching that the current switch isn't capable of, like adding an led, you might want to look up a true-bypass wiring diagram, most of them include how to wire up an led. There was a diagramon here somewhere but I can't find it now.

Can I just use a regular pot and switch?

Use an audio taper for best results. Some wahs have “special Taper” pots, which are probably just a little different as in 60/40s as opposed to the normal 70/30 tapers of audio pots.
