I've been trying to mess around with this tuning but the only thing I've been able to figure out is barring the entire thing
got any tips for playin in this tuning?

Try barring then using two fingers to play 1, 2, 3 or 4 frets above on the light a's. If that made sense.

... or just fret all the A strings or all the D strings and play the others open?

Yeah, that'll do the the same thing, basically. Great for drones. I've got a guitar tuned to cgccgc, and that's usually how I play it.

CGDGCD is a good tuning too.

One of my favorite tricks is to hold down the D,A strings with my thumb, and the high A,E strings with my middle finger. Roll that shit up and down the neck. Actually i think one of the main reasons I stuck with this tunign so long is how well it works with open droning strings.
Also it's where I found my favorite chord.

Try playing octaves on the two D strings and let the A strings ring out.
Or playing the unison strings one fret away from each other (sounds so fucking gnarly through the right fuzz).
Or capo dat shit real high up and play some twinkly arpeggios.
