No, I understand that part. But I can't help thinking that that phone receiver is somehow hooked up to that white pedal and then into the keyboard.

Maybe they use the dial tones from the phone to create music? I'd imagine that'd be pretty rad.

How else are you supposed to "dial" in some awesome circuit bent tones?

My bandmate did that - it's quite effective, and you can get some pretty nasty effected vox out of such a thing, though it does have a tendency to feedback pretty easily at stage volumes...
