Besides digging through the forums, ebay, and used.guitarcenter, how else might one go about shopping online for used gear? I'm looking for something particular that isn't produced anymore and I'm having a hard time.

As a side note, until today, I hadn't realized that Daddy's Junky Music shut down...

You could also put a "WTB" add on craigslist.
If you are in a smaller town with a shitty craigslist you can put it on one in a bigger city and offer to pay shipping.

Craigfind also searches craigslist across the country, you might find someone willing to ship it...you can also save the search on ebay, and you'll get an email if it ever comes up for auction.

adhuntr works as well for wide searches.
