Its a damn good way. Your expression pedal will run in parallell to the stock pot, and the smaller of the two values will determine the maximum amount of resistance possible between them both. Also, if the stock pot is kind of small, you will have a lot of travel on your exp. pedal that has almost no effect on the rest of the circuit.
