So my wife has determined she needs my help choosing something for our anniversary in the $200-300 range. I'm not one to argue but I am at the point where I really have no idea what I could want anymore. So thinking a bit outside the box what kinda of cool gear can be had for in this price range?

Hmmm... non-pedal stuff? How do you feel about synths? Korg has that fancy-shmancy Kaossilator Pro now...

And (to pin my own wants & desires on someone else's wishlist), I've always been enamored with the idea of an Omnichord played through oodles & oodles of pedals...

Your wife is fucking awesome.
I'd definitely go with some weird instrument or synth, but I haven't a clue where to start.

My fiance was in sort of the same place for my wedding present, she just gave me $200 dollars and said "this is for pedals, do with it what you will." It has let me play some B/S/T deals, and I've ended up with a couple of great pedals and cash left over.
That said, consider getting something outside your usual playing. For instance, I'm a bassist, so I'd pick up a decent little guitar, or vice versa.

Had a goatkeeper for a while, found I didn't use it much.

You could get a nice older digital synth. My CS1x was $115, so with $300 you'd probably be able to snag something you'd be happy with.
