is it at all possible to add a dwell control and/or a reverb only out to a classics version of an ehx holy grail?

The holy grail is a digital pedal. Generally speaking, those aren't the best for modding.
I don't have ANY knowledge of reverbs, so I'm honestly not sure what a dwell control does. I can't answer that. But, for the reverb only output, it may be possible to find where the clean signal and reverb signal come together, and rout an output directly from the reverb section. That could require breaking the clean signal connection or buffering from the reverb signal.

Dwell is the same thing as feedback. It's not possible to adjust that parameter on the Holy Grail. It is possible, however, to get a wet only signal. You turn the mix all the way up!
