Whoops, I have had Tanzania coffee too. I don't think I brewed it right though because I didn't love it. At that time I was really into using too many beans and letting the coffee step too long in my french press (Mocha Java is pretty wonderful for that process).
Are you a fan of the double pour over? This barista I know, knew I loved to tweak so they would do that for me. It takes a while but the 'caffeine buzz' is totally worth it.

I've never tried a double pour over, but as I'm an adult and no one in my house is strong enough to stop me, I could definitely try a pour over with hot cocoa. My kid would definitely cry because I drank his hot cocoa. So that's a bonus.

I don't think I'm using the correct terminology but what this barista did for me was 1. Do a pour over 2. Pour the first amount back through the beans (so two passes).

Non-dickish question:
Wouldn't that just result in over extracting the beans?

It might? I don't know...it was really good. That barista has since left the place I now seldom go anyway so we'll never know.

I want you to go back there and have one of those "but...that barista died in a fire over 70 years ago" situations. You know those situations? Is your coffee shop situated in a dilapidated victorian mansion?

Earlier I coughed/sneezed while drinking and shot hot coffee out of my nose. Normally I would post this in Confessions, but it's more coffee related than shame related.

Not tellin' you how you should drink your coffee. Just sayin' if you brew it that way, it'll be over extracted. There's a science to this.
