i could have my own weird dilemma coming up if things go better than i expect. before i got into graphics and print production i took a degree in Library Science, and i have three applications out for library assistant jobs as well as applications out for technical writer and graphics jobs; i would really like to get back into library work, which i find more rewarding, but graphics work pays much better and is more "interesting" on a day-to-day basis. i may very well be in line for a tech writer job if i play my cards right, and it's possible i could get an offer for one of the library jobs. if that happens--and i realize i'm getting way the hell ahead of myself--it's going to be a tough decision. i've said for years that i wish i could go back to 1990, when i left my library job and went into my ex-wife's desktop publishing business, and start over. on the other hand, i could be sending myself into a cul-de-sac; there's a guy at the place i used to work who's been in the same position ordering and processing periodicals since i left twenty-one years ago. on the one hand, a chance to go back to something and somewhere that once was home and feels in my heart like it still could be home; on the other, the chance to strike out towards a new field--i've never worked as a technical writer before, only edited and rewritten pre-existing documents--with the potential for a whole new level of income and accomplishment, but without the right-livelihood aspects of librarianship that are so dear to my heart. there's also the factor that the tech writer job is a contract that is purported to lead to more contracts, while the library jobs are permanent. money and service, safety and challenge...and how to evaluate the service content of providing information in an academic context versus organizing information to allow people to operate complex electronic equipment essential for quality control for large-scale IC production? i has a puzzled. anybody got any thoughts?

anyway, in the meantime i got out the 000 and worked out how to play "I Took Your Name" by R.E.M. in DADGAD tuning capoed up so i can keep the whole spine of the song going with one guitar. i fucking love that song. i have to say it was a good day.

you can get food grade plastic buckets from behind just about any large restaurant, where they're discarded after being emptied of industrial quantities of tomato sauce, mayonnaise, vegetable shortening, or other liquid/semi-solid food products (you haven't lived until you've dumped five-gallon buckets of mayonnaise into an industrial mixer as part of the process of making a massive quantity of bleu cheese salad dressing). more often than not there'll be lids as well. get yourself some chlorine bleach and PRESTO!

God, i haven't thought about the salad-dressing thing in eons. there's an entire novella of stories about that restaurant and the people who worked there...of course, there'd have to be a great deal of name- and location-changing to protect the not-at-all innocent. defamation laws have no statute of limitations

Won't it affect the fermentation process to use plastic, instead of glass?
I've also read that plastic containers are much harder to clean, and are really only meant for one use.

Not at all. I've been homebrewing for a long time, and never had a problem when I've used plastic for fermenters. I've used both glass and plastic and never tasted any difference in my brews. As for cleaning, just hand clean it as vigorously as you want, and then use either star-san or diluted bleach. That will kill any nasties that may be hiding in the pores of the plastic. If you can find a dedicated homebrew shop near you, they'll have plastic buckets custom-made specifically for beer brewing, with the gasketed port for an airlock.

The only time you want to retire plastic buckets is if you make one of the sour beers that use bacterial cultures, like Lambics and Flanders ales. Those bacterial strains tend to be harder to kill than normal beer yeast, and they'll tend to make any other beers you make in the same bucket sour.

Well, I figure that if I use a plastic bucket, I can air seal it myself by taping the shit out of it, and put a siphon on the top, and caulk that bitch in place.

Glad to get the info, seems like that might be much more manageable than trying to find a big glass carboy.

One time somebody linked a registry thing where you could look up sex offenders in your area, with pictures. OH LOOK, THERE'S THE DISH WASHER I WORK WITH. Indecent liberties with a minor, huh.
EVERYONE is on drugs, or at the very least they smoke like a chimney. Stupid drama central. The dumpster was basically the water cooler/weed smoking area. There's no way I wanted to sit up at the bar with them after all that bullshit every night.
You'd have to be both S and M to run a restaurant. Man, I can't believe I stayed there so long.
