I'm going to go out on a limb and say that pre-Thai food was earnest idiocy, and if nothing else it's validation for builders that they can, in fact, peddle bullshit in their marketing and people will swallow it.

I've started making my own chili paste in a mortar. Food processors are digital, and manual mashing is better. Maybe you can't, but I can taste it. I did go to culinary school though.
