Have had stir fried veggies with peanut sauce and rice two days in a row now. Having it tonight too! Love it!

That was one of my gripes with The Neverending Story. After Atreyu leaves Falkor's fuck-den, the astronomer dude's like "See those Spinxes? Only the righteous can pass them without getting wasted.", and then the only reason he survives their laser gaze is because he dashes through the fucking things! He's not a hero!!

Have a couple cups of leftover red beans made with the carcass of a rotisserie chicken and aromatics, decided to use it for the base of a chili. But then I accidentally bought too much beef and didn't really have room to add the beans. Now I'll have leftovers of both!
Beans
Brought a pound of dried, small red beans in a boil for 10 minutes, then set to simmer with the carcass, a couple cloves of garlic, a halved onion, a bay leaf, and a generous amount of salt.
Chili
Browned a couple pounds of chuck steak in batches and set aside, then fried onions and garlic with salt, cumin, oregano, smoked paprika, and garam masala, deglazed it with a simple guajillo chili sauce I made earlier, then added some canned tomatoes. Threw the steak back in to stew for a couple hours.

Our garden grew more zucchini than expected so I've been plunking around looking for ways to cook it. Today was zucchini pancakes (potato sub zuke) and they were hecka delicious. Pretty proud of the improvisation.

Baked a loaf of bread last night. My first attempt, I've made cakes, scones and biscuits before. Came out delicious, I have another batch of dough rising at home at the request of my wife and kid.

Rigatoni Neapolitan....but I wish I was playing guitar
