Two options;

1) Slot the tops of the trimmer shafts with a Dremel diamond cutting disc. Then drill three holes in the bottom cover, directly in line with the trimmers. You can then use a small screw driver to go in and turn them without having to open it up.
2) Remove the trimmers, use flying leads and place the pots on the outside. There might be enough room to fit them in between the board and the top panel, but without it in front of me, it's a tough call. You could put them on the side, since you'll never open it again thereafter. Nothings impossible really, just requires some planning. If there are no components on the backside of the PCB, you might even be able to transpose the pots directly from one side to the other of the PCB, drill corresponding holes in the top, and then remount the PCB. The only problem will be that the controls will operate backwards now.

Hey man, thanks for the offer! Unfortunately I live in Denmark, so it'd be a bit of a hassle. Also, seeing as there are already 5 pots up there under the front, and no components on that side of the pcb, I think it's doable with flying leads. I'll just have to watch the thickness of the base of the pots.

I do remember this being complex to do but if I recall we added a Devi circuit to the front end of the Fat Sandwich and made it switchable. Plus having to desolder the signal jacks & DC jack since it was rehoused in a different enclosure added to the difficulty of the project.

I do recall that everything was tightly fit in the way huge enclosure and not sure if there would be room to mount extra pots in the existing enclosure.

actualidiot, if you haven't done this type of work before, I would highly suggest you send it to someone to open it up and suss it out for you. Taking out the trimpots and adding wires will be the easiest part. Really just depends if theres room to add additional pots in the existing enclosure...

I appreciate the advice.
I have some soldering experience, and I plan to practice on a dead mixer I have lying around, which has similar pots, before I move on to the Sandwich. I'm quite confident that there will be enough room up there, having measured with some other pots I have lying around, otherwise, I'll go with the side option, or not do it at all.
It may or may not come out super pretty, but at the end of the day, it'll be something that I have done, and that's enough of a payoff for me. I can always get it rehoused or whatever if I fuck up completely. I paid less than 80 bucks for the pedal, so it's not like it would be a huge monetary loss either, should a dead pedal be the outcome.

Looking at the front, you might be able to flip them to the other side and just drill out holes for them in the area that I've circled. You can see how close the Presence (outlined in black on the PCB side) is to the other pots, so it'll be very close, but it's doable if you're patient and diligent. You might have to change to different taper pots, though, since the rotation will be flipped.

That's actually exactly where I've been thinking of putting them
