I'll check these out. I'm pretty well versed in space rock, krautrock, psych rock and well, I dunno about math rock, I like Polvo and stuff a bit. I guess I'm looking for instrumental stuff that might fall outside of the psych riffing a la Earthless (that I find pretty generic at this point) and the Mogwai formula (same thing) that are pushing things 'out' a bit more.... it's tough to explain but I'm very much appreciative of the suggestions....

Basically I'm looking for things that are "challenging" without sounding like I'm a pretentious douche :grumpy:

I think I understand what you mean, that Bluesy stuff that sounds sorta familiar to the ear maybe, I usually get bored with that quite easily too though to me it seems most apparent in Stoner Rock really (on the other hand I'm a dumbo with genres and what it's all supposed to be because I usually end up liking the bands that don't do the thing that's considered specific to the genre).
What struck me in Maserati was that it sounds quite electronic, repetitive and groovy compared to other bands that might be considered Post Rock, bands that have those kind of qualities are also to be found in other Rock styled genres, that's mostly what I was trying to say before.

Talk Talk's "Spirit of Eden" and "Laughing Stock" might not be what you had in mind, but anyone who hasn't heard them should. Unwound's "Leaves Turn Inside You" is kinda post-ish in its ways. The Savage Republic stuff that I've heard is like proto-post. Praxis's Transmutation maybe.
