Around my parts the birds are pretty active starting as early as 4am. If you can find an outdoor place or open window to mic some birds in good weather that might work. There's a bird chirp I keep hearing that would make a really good sampled synth sound but I think there's too much background noise to really isolate it the way I want.

I want to second the seldomly used elevators idea.

when i lived by the creek in the redwoods i always meant to make recordings of the sound of the water trickling over the rocks at inght, and of the frogs and crickets. here, i could get some great freight trains...therte's one whose whistle/horn blows a perfect E-flat major triad that makes me grin uncontrollably. being next to ORD, there's also the potential for some "You Made Me Realise" jet aircraft. i also meant to get San Francisco foghorns at night, which are remarkably loud, so much that you can hear them on Hospital Hill in the wee hours of the morning.
i'd also like to get some nice, rattly, beat-up industrial ventilation fans. and if you can find a good freight elevator...

at some point i'm going to do an ending of an album that's a
hommage to
Pet Sounds, with train sounds fading away to the sound of a cat purring contentedly.

What if you buried a mic somewhere for a bit? Or put one under water? I knew a photographer who used to bury unexposed large format negs in different places for different amounts of time, and based on the soil temp and chemical composition they would end up with different abstract washes of color on them when he'd process and print them.
Some other stuff that may be of interest :
Chris Watson : Founding member of Cabaret Voltaire. Sir David Attenborough's field recordist. He's done stuff like record beehives and then figure out the pitches that they make and compose pieces for small choral groups to accompany the field recordings of the bees. Awesome stuff.
http://www.chriswatson.net/Alex Braidwood : Listening Instruments : My buddy Alex does all kinds of awesome field recording sound experiments too. His Noisolation Headphones are particularly badass.

This probably is one that I'll have to do this year. At spiral jetty there's this strange and wholly unnatural silence broken only by the flight of jets overhead. I'll have to take some field equipment out and make a recording sometime.

Could very well have, yeah. I definitely posted a video he did of one of our modular synth doodles. He's great people, and his work is outstanding. (His wife too for that matter.)

Hell yeah!
Something else you can maybe consider doing is putting together some contact mics and just sticking them onto something for half an hour. It won't be as ambient sounding, but it will certainly be different. Or maybe making a hydrophone?
