Yeah when they play live they build the songs in front of you like that... They love Austin, I've seen them with Andrew Bird pitchin in a couple times too...

the building tracks onstage thing is part of my solo looping aesthetic as well. i love the way they swap instruments as the recording goes on, and the way the one guy plays rhythmic sax like a Steve Reich arrangenent.

I would just loop the piano's line out sound, not the MIDI, with a pedal looper. I specifically use an Akai Headrush with my digital piano(which I believe is what your friend has) and synths as well, though the DL4 could be a good option too. Or even the Boss RC20/30 if he wants to save presets. I can see where he's coming from with the midi; using a high end piano emulator to sample garageband's sounds is like playing a 60's Les Paul into one of those headphone amplifiers.
