Re: minimalist stripped down drum kits
I used to play with a drummer who'd use three toms, a kick, and a hi hat. I played Rhodes->delay->fuzz, so generally I'd hold the rhythm and he'd do melodic stuff. Asshole was a fucking genius.
My band's drummer generally goes kick, snare, floor tom, and eighty million cymbals, but we're trying to talk him into ditching the cymbals. Apparently that's what Peter Gabriel did on some of his solo albums, he took all his drummers cymbals.
I don't like cymbals, come at me.

I'm a big fan of the three/four piece kit in heavier music.

Although I do agree with you, a lot really, I'm just gonna have to give a big ol
to your examples. I mean, okay, heavier is subjective, sure. And the first one at least sounded like Touche Amore covering Botch (well, until the ending) and had a "brutal" video. But, like, what is that last one? Whaaaazaaat?TAKE ME TO YOUR LEADER

Thirded, we jammed like five times then he left for LA. I've been looking for a drummer who could do the same kinda thing since, but they're all jazz players and jazz players don't take me seriously.

I was just speaking in comparison to the OP bands, i.e. "heaviER." And, no, Showbread are not "heavy" but any stretch of imagination, they were just a band with a simple kit that I enjoy.
Also, brutality can suck it.
post-

P.S. The first one is my favorite band, The Chariot.

I dig, I dig. Being "brutal" is fuggin' lame, hence why i put it in quotes. And, I get whatcha mean. I'll be honest, that's the first time I've ever listened to The Chariot, and though I'm not so into it, I can see how you dig that a lot (and I know this is weird but over time, through your posting here, I know what kind of music you like really well, creepy, I know). Have you ever listened to Touche Amore? Just a curious derail, that's all.

I've seen their name around and they came up when my buddy was playing me some Defeater stuff. Checking them out now.
Pretty sweet.
