With that reasoning I'd say the bassness of a Jazz bass actually overtakes the offset guitarness , making it an offset bass, but not a guitar at all. So even if you want to reason it being a bass guitar I'd still say nay. A J-Bass is not an offset guitar.

So, for either of these to be offsets I have to switch out the pickups?
Which pickups should I use for maximum offsetiness?

Agreed. Way too much bass to be offset or guitar.
I think the term "offset guitar" is similar to the term "indie rock".
It started out as a literal description for a guitar with an offset waist(waste). Now is generally used to describe a certain type of guitar...Jaguar, Jazzmaster, Mustang etc. "Indie rock" started out as a term used to describe independent rock music and now generally refers to a certain genre of music, independent or not.
None of this changes the fact that a Jazz Bass is not a guitar.

A bass guitar is of the guitar family and therefore a form of guitar. A lot a bassists don't like to admit it but if you play bass guitar you are playing a bass guitar and therefore a BASS-GUITARIST, otherwise you would be playing a upright or a tuba.
