Pickup with reversed winding after initial winding?

Anyone have any idea what would happen if you wound a pickup in one direction to normal winding, then somehow secured the winding in a way that would let you flip the direction of winding and wind another coil in the opposite direction to the first wind?
Would that cancel out the first winding and make the pickup dead? Would it work and cancel hum?
